| Quick and Easy Salmon Patties | Shrimp Scampi |
1 can pink salmon
1 egg
1/3 c. minced onion
1/2 c. flour
1-1/2 tsp. baking powder
1-1/2 c. Crisco®
Drain salmon; set aside 2 T. of the liquid. Mix salmon, egg, and onion until well blended and sticky. Stir in flour. Add baking powder to the reserved juice. Stir into salmon mixture. Form into small patties and fry until golden brown in the oil.
6 catfish
2 eggs
1/4 cup milk
1 cup corn meal
1 sliced up lemon
1/2 cup oil
Beat egg and milk
together.
Dip catfish fillets in egg/milk mixture then roll in cornmeal. Fry in a
hot pan with about 1/2 cup oil until brown, about 20 minutes. Drain on
a paper towel covered plate.
Serve with the lemon.
1/3 lb. fillets per
person
2 c. dry pancake mix
salt
oil for frying
lemon and pepper seasoning
cocktail sauce
Wash and dry fish. Dip
fish
into water. Sprinkle with salt and lemon pepper. Coat lightly with
pancake
mix. Fry in deep fat for 4 or 5 minutes
or until fish flakes easily.
Serve with cocktail sauce.
Shrimp
2 green onions
2 tbs. parsley
1 tsp. lemon juice
2 dashes Louisiana hot sauce
6 tbs. butter or margarine
salt, pepper, to taste
garlic powder
Melt the butter
over
med. high heat. Add the chopped green onions and mix well with the
butter.
Add the shrimp, salt,
pepper,
garlic powder hot sauce. and lemon juice. Just before shrimp are
done,sprinkle
the parsley over the mixture. This takes no more than 3-4 mins to
prepare.
