Hamburger and Veggies in Foil

The Basic Skills program usually prepares a quick dinner
when out on an overnight campout at our Long Term camp. This
dinner is a foil-wrapped pocket-meal cooked over an open campfire.
Here's the recipe we use for the foil-pocket meal:

heavy-duty foil, about 72" long, folded over to make a four layer sheet
about 18" by 18"

one frozen hamburger patty
- two heaping tablespoons chopped potatoes (skin on)
- one heaping tablespoon chopped celery
- one heaping tablespoon chopped carrots
- one heaping tablespoon chopped onions
- two tablespoons salad dressing (Caesar flavor is great) or
two tablespoons margarine (prevents sticking and burning)
- salt, pepper and other spices to taste (try a tablespoon of A1 sauce!)
Fold foil up to meet over the food, then fold a seam at the top over
TWICE and TIGHTLY seal, so you get a finished seam about 3/4" wide, double folded.
Then fold and seam-seal the two ends in the same manner. Using
a frozen piece of meat helps keep the whole package fresh for at least
six hours - plenty of time to hike to the camp site, build a fire, and
start cooking without worrying about spoilage.
When you have a nice bed of coals from a campfire, place the foil dinners
on the coals (not an active fire!). After 15 minutes, turn over and cook
other side. Remove after 30 minutes. Be careful that no steam burns you
when you unwrap the dinner. Enjoy!
