Trout Baked in Foil

Fresh trout can be easily cooked in foil right on a camp fire. Here's a recipe
which has given great results on several trips.
Clean trout soon after catching, and remove the slime and scales from the skin by scraping from tail to head with a knife. Butter the intestinal cavity of the trout lightly and add a few spices - lemon juice or lemon pepper, oregano, a little garlic,
tarragon (easy - it goes a long way). Wrap the trout in a double layer of foil and place on the coals of a campfire. Turn (use sticks or tongs) about every five minutes. Trout will be done in about 15 minutes. If well done, the skin separates easily from the flesh.
